For the holidays it brings especially sweet success to the art of candy-makin- g. A microwave oven cuts down on the cooking time for candy-makin- g and makes it easier to control the cooking process. It also takes some of the guesswork out of candy-makinsuch as adjusting the temperature on the stove or selecting g, the proper pan. So don't be timid about making fudge, nut brittles and other confections in a microwave oven. Use a candy thermometer and follow the recipe instructions carefully. And if you are going to the effort use quality ingredients, such as real butter, fresh nuts and newly purchased spices and flavorings. The following recipes from the American Dairy Association offer some interesting flavor combinations. Coconut Fruit Balls are prepared from a mixture of crushed pineapple, dried fruit, butter and prepared cereal rolled into shredded coconut. Especially easy to make, they provide an alternative for family members and guests who usually shy away from sweets. Buttery Cashew Brittle combines the extra special flavors of real butter and fresh cashew nuts, while Macadamia Nut Fudge offers fudge lovers something extra to savor. Both recipes can be prepared to the cooling stage in less than 30 minutes. If you plan on giving any of these candies as gifts, be sure to pack them well to prevent them from drying out. Also, you might include a copy of each recipe so those persons on your list can enjoy them throughout the year. Microwaved candies are easy and fun to make for the holidays. Healthful snacks have kid appeal Experts now say that proper nutrition in childhood can greatly influence later eating habits, as well as reduce or prevent health risks ranging from obesity to cancer, clogged arteries and heart disease. Parents know that children love between-memunchies, and snacks and children seem inseparable. This is especially true during the winter months when youngsters spend more time indoors, and television viewing and snacking is at its highest. Realistically, you cannot expect your youngster to eat healthful snacks, such as carrot sticks while watching "Bugs Bunny" or a bowl of oat bran while watching "My Little Pony." But, there are wholesome treats you can add to your repertoire that are fun, and still contribute to a healthy diet. Here are some tips on healthy al Low-fa- food and beverage snack alternatives. These treats have kid appeal and are ideal for when children are watching TV. Air popped popcorn is fun to munch, and it's high in fiber and low in fat. Apple sauce is a convenient and healthful snack that is fun to eat. It has no fat, and its natural sweetness appeals to kids of all ages. The single serve containers are also perfect for lunch boxes or backpacks.
