Monosodium glutamate (MSG) is "a useful flavor enhancer" that "occurs naturally in a wide variety of foods," says a new Scientific Status Summary released by the Institute of Food Technologists. Its toxicity is low. Dr. L. Reed Freeman of Brigham Young University's department of food science, IFT Regional Communicator for Utah, described the use of MSG in cooking, which Dr. Freeman says goes back to Oriental cooks of antiquity.. In the late 1960 s, a series of laboratory studies indicated that "large doses and high concentrations not common to foods" could be toxic to the central nervous system of laboratory animals, and that this effect was more pronounced on younger animals. Although other laboratories failed to confirm these findings, manufacturers of infant foods removed MSG from their recipes, especially since it had been used as a flavor enhancer and not a nutrient. In other studies to determine whether MSG consumption might affect a fetus in the womb, researchers found that the primate placenta forms "a virtually impregnable barrier, apparently capable of metabolizing large amounts of glutamate," the Status Summary says. Bring to boil over medium heat, stirring. Cook to 23,8 degrees (soft ball stage). Meanwhile, generously butter an ring mold and a large mixing bowl. Toss comfbkes and almonds in buttered bowl. Pour hot syrup over cornflake mixture; toss quickly to coat. Pack into ring mold. Set aside 10 minutes. Run a thin knife around inside edges of mold; invert onto serving plate.
