K!ake it once, and you've made your reputation. rum-flavor- MIGHTY MOUSSE cup Diamond Walnuts 2 tablespoons (2 cnveL) un flavored gelatin Vi cup coid water 5 eggs, separated Vi cup brown sugar, firmly packed 2 teaspoons instant coffee Yi teaspoon salt 1 cup milk, scalded Va to Vi cup dark rum 18 lady fingers, split cup granulated sugar 1 teaspoon vanilla 1 cup heavy cream, whipped Drop walnuts into boil-in-g water and boil 3 mm.; 1 drain. Spread kernels in shallow pan and bake at 0 350 deg., stirring several times, for min., till crisp. Chop medium fine. Soften gelatin in water. Beat yolk (in top of double boiler), stir in brown sugar, coffee and salt. Gradually blend in milk. Cook over boiling water, stirring constantly, 5 min. or till thickened. Remove from heat, add gelatin and stir till dissolved. Blend in rum. Chill till thick but not set Line sides and bottom of 9 inch spring form pan with lady fingers. Beat egg whites till fluffy, add vanilla, then beat in sugar a tablespoon at a time, to make a stiff meringue. Fold walnuts, custard and cream into meringue. Pour into pan, decorate with walnuts.
