Show Thursday, July 19, 2007 NORTH COUNTY NEWSPAPERS Page 13 'ijmhm I taste i Emily Marlowe NORTH COUNTY STAFF Today it could be the hottest day on record, or at least in our home. The air conditioner has broken only to be found out upon returning home from church. So, yes as it is Sunday the repair shops are closed and there is not much we can do. My husband is a fix-it-your-self kind of man, he has looked at every part and checked out every thing but there is not much he can do at this rate. So as I am writing to you today I am half way undressed and my "oven" that is always turned on "cooking" our baby is now on broil. With any luck the baby will be done sooner than later at this rate. I was planning on making a great plate of oven-fried chicken for dinner today, but now it is just a dream away. I will not be heating the house with the oven, as I want us all to live to see tomorrow. So, I will have to ask my husband to stand outside in the 100-plus degree heat and cook us something some-thing on the barbecue grill. He will probably be grateful, as it is most likely cooler outside than in. So, as I am not able to cook my chicken today I will let my mouth water as I share this amazing recipe with you. Today in a society where everyone is counting calories and watching their weight this recipe will hit home for many. With traditional fried chicken having 552 calories, 34g of fat and lOg of saturated fat this new recipe will be much healthier for your heart and Oven-Fried Chicken 1 2 cups buttermilk 1 2 tablespoons Dijon mustard 1214 tsp salt 1 1 12 tsp garlic powder II 12 tsp black pepper 1 tsp hot sauce 1 8 pieces of bone in chicken, skins removed 1212 cups crushed corn flakes (to crush cornflake crumbs place them in a Ziploc bag and use a rolling pin) 1 34 cup fresh breadcrumbs torn finely 1 12 tsp ground poultry seasoning 1 12 tsp paprika t 18 tsp cayenne pepper 1 2 tablespoons vegetable oil Whisk buttermilk, mustard, 2 tsp salt, 1 tsp garlic powder, pow-der, 1 tsp black pepper, and hot sauce together in a large bowl Add chicken turn to coat well, cover and refrigerate at least one hour or over night. Adjust oven rack to upper-middle position and heat oven to 400 degrees. Line a rimmed cookie sheet and coat a cooking rack with cooking spray. Gently toss corn flakes, bread crumbs, remaining 12 tsp garlic powder, remaining 12 tsp black pepper, remaining remain-ing 14 tsp salt, poultry seasoning, paprika and cayenne pepper in shallow dish until combined. Drizzle oil over crumbs and toss until well coated. Working with one piece at a time, remove chicken from marinade and dredge in crumb mixture firmly pressing crumbs onto all sides of the chicken. Place chicken on rack. Bake for 35 to 40 minutes min-utes or until juices run clear. Note: If you like your chicken a little spicier increase hot sauce to 1 tablespoon. Replace 14 tsp salt in crumb mixture to 12 tsp chili powder and increase cayenne to 14 tsp.
