Those familar with the plaza shops will remember the Top Pocket as last year's Coffee Trader. John Michel, a Salt Laker and and old hand at the resort catering business,.. purchased the Coffee Trader and reopened the shop two weeks ago as a coffee house in both senses of the phrase. "I'll be keeping all the coffees and teas.' the coffee makers and grinders, but I'll also expand the food service," says Michel, "i plan to carry tap and bottled beer and offer a variety of fast foods like pocket sandwiches, bagels, pizza on a bun, soups, chili." Michel will conform the hours of the Top Pocket to the nees of his patrons. Says the restaurateur: "In winter the shop will open early, before the lifts, so that employees can buy a quick breakfast here of ham and scrambled eggs or whatever. At night I'll stay open until after night skiing and close the doors alter everyone is finished with his beer, or until I have to by law. Summer hours will be shorter but I don't plan to close; I'm catering to the locals, not just the tourists." The unique attraction of the Top Pocket is, of course, the steeping agents for hot drinks imbibed to fight the cold of a winter's day: Black teas from China, non-caffeine non-caffeine herb teas and coffees. The beans from from the far East, Africa, Central and South America. Ethiopia. Arabia. There are French and Viennese blends. The beans can lie purchased whole lor home grinding or will be ground to customer specification on the premises. So how did a coffee shop get the name Top Pocket? "Well, I thought of a lot of different names for the restaurant but all of them were rejected by the Secretary of State because they were already in use by other business or they were deceivingly similar' to established names," says Michel.
