The Spanish omit the pastry, so Spanish "flan" is custard pure, simple sim-ple and delicious. Flan 4 teaspoons dark corn syrup 14 cup sugar 3 tablespoons corn starch '8 teaspoon salt 2 cups milk 1 egg, well beaten 1 teaspoon vanilla Pour 1 teaspoon corn syrup into each of four custard cups. Swirl cups to coat sides. Mix sugar, corn starch and salt in double boiler top. Gradually add milk, stirring until smooth. Cook over boiling water, wat-er, stirring constantly, until mixture thickens enough to mound slightly. Cover; cook 10 minutes stirring stir-ring occasionally. Remove from boiling water; stir a little lit-tle mixture into egg. Then stir all into hot mixture. Cook over boiling water 2 minutes, stirring constantly. Remove from heat; add vanilla. Pour into custard cups. Chill and unmold. Makes 4 servings.
