Add green pepper and onion and cook gently until pepper is tender, about 2 to 3 minutes. Remove from heat and blend in flour and seasonings. Gradually stir in the 1 cup evaporated milk, then the beaten egg. Re- turn to low heat and cook, stirring stir-ring constantly, until mixture is thickened, about 10 to 12 minutes. Remove from heat and stir in ham. Spread in a shallow pan and chill thoroughly, thorough-ly, about 2 hours or over night. When mixture is chilled, pour salad oil into electric frypan to a depth of 1 inch and preheat to 385 F. Meanwhile cut chilled mixture into 12 portions. Lift out each portion and form into a roll about 2V2 to 3 inches long by rolling between palms of hands. Roll each croquette in crumbs, then in the V3 cup evaporated milk, then in crumbs again. Fry in hot fat until golden brown, turning once, about 2 to 3 minutes on each side. Drain on paper toweling. Croquettes may be kept hot until serving time in a warm oven. Serve hot with Whipped Horseradish Sauce. Makes 12 croquettes (6 servings). |
