Apricot Shortcake de Luxe 1 sponge cake; 2 cups drained canned apricots, cut in quarters; cup cream, whipped; cups moist, sweetened coconut. Bake cake in SxSx2-inch pan. Split warm cake iu half. Spread whipped cream over cut surface of one-half of cake: arrange 1 cup apricots on cream and sprinkle with 4 of coconut. Adjust second laver ' cut-side down, aud repeat garnish. Cut in squares and serve at once. Serves 9 to 12. |
