Show Old New-Old Almond Cake A cake made without flour Yes Indeed and this Austrian Austrian- style torte flavored and textured with ground almonds is nothing short of magnificent Grinding the almonds Is easily done in your food processor or a portion at a time In your electric blender mill or food grinder with a fine blade Viennese Almond Torte 1 cup finely ground 4 3 teaspoon almond almonds packed extract 1 cup fine soft bread 2 1 pint whipping cream crumbs packed 2 tablespoons sugar 2 1 cup sugar 3 2 cup raspberry jam 1 teaspoon baking powder Whole blanched 2 1 teaspoon salt almonds toasted 5 eggs In bowl mix ground almonds with bread crumbs the 2 1 cup sugar baking powder and salt Beat eggs until thick and lemon colored stir into crumb mixture with 2 1 teaspoon almond extract Turn batter into 2 greased and floured 8 inch 8 inch cake pans Bake at degrees 20 to 25 minutes Remove from oven let stand 5 minutes Turn out onto racks to cool Just before serving whip cream with 4 1 teaspoon almond extract and 2 tablespoons sugar Place one cake layer on plate spread with 2 1 cup jam and 2 of the whipped cream Top with second layer Dollop remaining whipped cream around top edge Garnish with remaining jam and whole almonds Makes 8 to 12 servings |
