Chocolate Malted Milk Egg Fluff (Makes 4 glasses) Jz cup malted milk 3 cups bottled milk 4 eggs ?4 cup chocolate syrup tablespoons sugar Mix malted milk into a smooth paste with one-fourth cup of the cold milk. Separate eggs and beat yolks well. Add malted milk paste, remainder of milk and chocolate syrup. Beat or shake until foamy. Pour over ice into tall glasses. Beat egg whites until un-til foamy, add sugar gradually and beat until stiff. Pile lightly on top of malted milk and sprinkle sprin-kle with , nutmeg if desired. A prepared chocolate syrup may be used, or make your own as follows: Chocolate Syrup. Mix V2 cup cocoa or 2 squares unsweetened chocolate (cut in pieces) with cup sugar and a pinch of salt. Add cup bottled milk, which has been scalded, and 1-3 cup corn syrup, stirring until well blended. Cook over low heat until un-til thick and smooth, about 10 minutes. Cool slightly and add Vz teaspoon vanilla and one tablespoon table-spoon table fat. |
