' Spiced Coffee Pie features one of these quickly made crusts, and the crumb mixture is also used for decoration. Made from ingredients nearly always on hand, this chiffon pie is flavored with spices and coffee made, for freshness' sake, from your vacuum-packed jar of glassed coffee. To make one 9-inch pie: Crust and Topping 114 cups crushed corn flakes '2 teaspoon cinnamon 2 tablespoons sugar 'i cup melted table fat Combine crushed corn flakes, the two tablespoons sugar, Vz teaspoon cinnamon and melted table fat. Reserve one-fourth cup of this mixture to decorate top. Spread remainder evenly in a nine-inch pie tin and pat down firmly. Chill thoroughly. Pie Filling 2 teaspoons unflavored oelatin teaspoon cinnamon 2 tablespoons cold water 'a teaspoon cloves 2 egos Vi cup bottled milk cup sugar Si cup strong coffee infusion 4 teaspoon salt ' Soften gelatin in cold water. Separate egg yolks from egg whites. Beat yolks and add one-half cup of sugar, salt, spices, milk and coffee. Cook slowly, stirring constantly until mixture is slightly thickened and coats the spoon. Remove from heat. Add softened gelatin and stir until gelatin is dissolved. Chill until mixture mix-ture begins to thicken. Beat egg whites until stiff but not dry. Add remaining sugar gradually, beating after each addition. Fold into gelatin mixture and pour into chilled pie shell. Decorate top with reserved crumb mixture and chill in refrigerator. |
