Q i8 The centerpiece of any wedding reception is the beautifully decorated wedding cake. But where did this age-old tradition originate? Wedding cakes of some type have been used for centuries cen-turies to celebrate the union of two people. Early Romans Ro-mans broke a fine white bread over the bride's head as a symbol of fertility. In medieval England, sweet buns replaced this Roman "cake." Another custom was for guests to bring small cakes to the wedding and pile them in the center of the table. To ensure good luck, the bride and groom were to kiss over the cakes without knocking a single cake to the floor. It was a French baker that began the tradition tradi-tion of icing all the small cakes into one large cake. Thus, our modern tiered wedding cake. While the traditional groom's cake is a dark-batter dark-batter fruitcake, the cake most often served at weddings wed-dings today is a white cake decorated with frosting (formerly (for-merly called the bride's cake). This tradition is changing, too, as modern wedding cakes have become more flavorful and adventurous; adven-turous; some of the most popular flavors are cherry chip, yellow, spice, chocolate choco-late and marble. Today, many wedding cakes are made by "home" bakers who often start from a packaged cake mix, making it easy to vary the flavor. But how does one cut this beautiful, edible sculp ture?
