COMBINED with cream cheese, this is an easy to prepare sidedish which might be served often for mild flavor blends. ZUCCHINI WITH CREAM CHEESE 5 medium zucchini 2 Tbsp. onion, chopped fine A mild flavored zucchini recipe should appeal to those who enjoy the contrasting contrast-ing flavors of cheeses. In this recipe given by Wendy Tingey, the mild vegetable is enhanced with two kinds of cheese. 1-3 oz. pkg. cream cheese Parmesan cheese SLICE the zucchini squash into a saucepan with onion and small amount of salted water. Simmer just until fork tender. Drain thoroughly. Soften the cream cheese and blend with the squash. Place in serving dish and sprinkle generously with Parmesan cheese and serve. If necessary reheat after blending in the cream cheese. Serves 6 to 8 medium portions. WENDY is planning to attend at-tend Weber State College this fall, planning to major in home living.
