Show I 1 THOSE FOREIGN CARES CAKES by betty barclay there la is always a thrill in being able to introduce some favorite cake to your guests under a foreign name somehow it seems well its class to say bay the least here are two recipes tor for real aristocratic cakes in taste as well as in name 4 genoese cake 4 eggs I 1 I 1 cups special cake hour flour sifted bitted 1 I ia teaspoons baking powder aj t cup butter scup 1 cup powdered sugar vt teaspoon lemon extract beggs 4 eggs well beaten sift hour flour once measure add taking baking powder and sift together three times cream butter thoroughly add sugar gradually and cream together until light and fluffy add flavoring add eggs alternately with flour a small amount at a t time fine beating well alter after each addition turn into greased paper lined pan 8 X 8 x 2 inches bake in moderate oven deg F 50 minutes madeira cake 2 eggs cups special cake flour sifted 1 teaspoon baking powder i cup butter 4 cup sugar beggs 2 eggs unbeaten 6 tablespoons milk few drops lemon extract sift flour I 1 ow once measure add baking powder and sift together three times cream butter thoroughly add sugar gradually and cream together until light and fluffy add eggs one at a time beating well after each addition add flour alternately with milk a small email amount at a time beat after each addition until smooth add lemon extract turn into loaf pan 3 x 4 x 8 inches lined with greased paper bake in moderate oven deg F I 1 hour or until done chocolate ice cream 2 junket tablets 2 tablespoons cold water bounces 2 ounces chocolate aj t pint cream IIA 1 4 cups sugar 1 quart milk 1 teaspoon vanilla put junket tablets in cup with cold water crush with spoon to dissolve e melt chocolate over hot water and add A cup of the sugar add milk and cream a very little at a time stirring until smooth after each addition add rest of sugar and warm to lukewarm NOT HOT add vanilla and dissolved junket tablets turn at once into freezer can let stand in a warm room until firm about 10 minutes then cool pack in ice and salt and freeze recipe makes 10 to 12 servings orange cherry brozen salad serves 68 6 8 1 tablespoon gelatine gelat lne 2 tablespoons cold water scup 1 cup whipping cream 4 cup powdered sugar 1 tablespoon lemon juice acup 1 cup mayonnaise 14 cups drained orange pieces 2 cup chopped cherries maraschino or candled candied lettuce hearts soak gelatine in cold water and dissolve over boiling water whip cream add sugar dissolved gelatine gelat lne lemon juice and mayonna mayonnaise lse mix well it and fold 1 in oranges and cherries pour in mold and pack in alternate layers of ice and salt for or 4 hours or put in tray of refrigerator friger ator and chill until firm serve garnished with crisp hearts of lettuce it if desired garnish also with additional mayonnaise or whipped cream lemon cream filling sufficient clent for 1 three layer cake begg 1 egg acup 1 cup sugar 4 tablespoons cornstarch 1 cup water 14 cup lemon juice 12 11 teaspoon grated lemon rind 1 tablespoon butter beat egg add sugar and cornstarch mix well add water lemon juice and rind cook in double boiler 15 minutes stirring frequently add butter cool before spreading on oil cake |
