Remove "drumsticks "drum-sticks ' from three chickens: sinpe and clean, then put them In the stock pot and cook twenty minutes. Take out and bone; also remove tendons. Season well with salt and pepper, a little cayenne and a pinch of best ground mustard for each leg. Rub a little Worcestershire sauce lightly over them. Mix a beaten egg with a cup of sweet cream and pour over the top. Bake one-half hour; brown on top: serve hot. $- Stuffed Leg of veal Roasted Creole Style. Remove bones from a leg of veal and boll down in a little water to jellv for the roast. Fill the cavity with a forcemeat of bread, chopped meat and olives, seasoned with half "a red pepper, salt, thyme and sweet marjoram. Add two eggs and a minced onion. Put into a pot or saucepan with four large onions and olive oil to keep from burning. When oil is very" hot put veal in. Cook carefully care-fully until veal is nearly done, then add the jelly from the bones. Brush the meat with raw egg, sift rolled cracker crumbs thickly over it and brown in oven. Lay on hot platter, surrounded by roasted potatoes. Strain the gravy, thicken it. season if necessary, and serve in gravy boat. Mincemeat.
