cottage cheese allow the milk to become well wel toured set ahe pan in a slightly hot hol oven leaving the door open let it remain just until the whey and curd separate then pour into a cheesecloth bag and hang to drain empty thi curd from the bag when well drained I 1 and mix with a little salt to taste a 9 bit ot of soft butter or a few tablespoon fuls ot of sweet cream it may be further seasoned wite pepper made into small email balls and served with the salad course it if do sired some wet molds may be lined with the cheese and the centers center s ot of the molds filled with salad nuts and cel ceh 5 try ery when cold the molds molde may be turned out on lettuce leaves and served with salad dressing
