In "Tex-Mex Turkey Grill", turkey breast cutlets are simply marinated in a snappy combination of traditional Mexican favorites along with the untraditional Kikkoman Teriyaki Sauce. The delicately sweet taste of teriyaki sauce, a blend of naturally brewed soy sauce, wine, brown sugar and select herbs, adds a delightful counterpoint of flavor to the other ingredients in the marinade. Turkey breast cutlets are a wonderful change of pace for barbecuing and they're ideal for marinating because the full flavor of the marinade can easily penetrate the tender cutlets. You'll love this recipe because it's deliciously easy and equally tasty cooked on the grill or broiled indoors. TEX-MEX TURKEY GRILL 1 small tomato, quartered cup Kikkoman Teriyaki cup chopped onion Marinade & Sauce V cup chopped green pepper 3 tablespoons vegetable oil 2 tablespoons minced fresh 1 tablespoon lime juice cilantro or parsley teaspoon black pepper 2 cloves garlic, pressed 4 turkey breast cutlets Measure tomato, onion, green pepper, cilantro, garlic, teriyaki sauce, oil, lime juice and pepper in blender container; whirl on medium speed 30 seconds. Place turkey cutlets in large plastic bag; pour in marinade. Press air out of bag; tie top securely. Refrigerate 4 hours, turning bag over occasionally. Remove cutlets from marinade; place on grill 4 inches from hot coals. Cook about 5 minutes on each side, or until turkey is tender. (To broil: Place turkey cutlets on rack of broiler pan. Broil 4 to 5 inches from heat 7 to 8 minutes on each side, or until turkey is tender.) Makes 4 servings. Or use a 2V4 to 3-pound turkey half breast, skinned, boned and cut lengthwise into 4 or 5 equal pieces. |
