in dairying than wisconsin the premier dairy section ot of america today not only are natural conditions unusually favorable to dairying but the economic situation in utah demands the advancement of industries whose products are marketable at home or in highly concentrated form since the corring coming of the pioneers dairying has played an active part in the industrial life of utah in the early days the passing wagon trains afforded about the only market and butter making was largely confined to the farms although there may have been a few cheese plants then came the mining camps and the railroad and the dairying industry began to assume commercial importance in ill 1905 there were reported ninety ere creameries crea ani meries eries cheese plants and skimming stations in the state mostly small and the aggregate value of 0 the production was estimated at about about this time the first conden sory in the state was c completed at richmond and cream separators sep aerators appeared on the market in 1910 the common use ot of cream separators made it ros possible sible to ship cream to the bigger centers and many of 0 the small plants closed down because they were unable to meet competition in the rural cream markets market s the value of dairy products in utah has increased from 2000 in 1905 to about in 1921 not only is the increase noticeable ti but the chief advancement has been through the improvement in the dairying herds under methods of stabilizing and increasing their production the dairy industry is pretty well scattered among the mountain valleys throughout the state there are probably not more than six counties of the twenty nine which do not market milk and cream during certain times in the year and all of them undoubtedly would figure to a greater degree in the industry it if adequate transportation facilities were available As it is practically one third ot of the milk and cream sold to cream erles eries and cheese plans comes from also the increase in the herd the fertilizer and the feed for hogs and chickens all of which brings the estimated yield per animal up to about annually dairying is an industry especially adapted to small farms rather than to large ranches and should be developed with full recognition ot of a proper sense of proportions it provides the highest possible market tor for alfalfa and grain and alfalfa trend of the dairy industry is steadily westward and throughout the west at this time there is a tremendous demand for good dairy stock we have in utah every natural advantage conducive to the building of a great industry in dairying it is the opinion of experienced dairymen that it if the farmers can he be financed the number of dairy cattle can be doubled in utah within the next five
