Show Ice Skaters Rejish Au Gratin Sandwich THE best mid-winter sport on the calendar is ice-skating. It Is one of the most popular, too. Perhaps you are lucky enough to live near a lake that freexea early In the winter. A lake in which the ice booms and cracks as the temperature falls Is the ideal place for skating. In cities where there are no natural lakes tbe park lagoons are turned into skating rinks, and tennis courts are flooded to help supply ice space for this popular sport. - Mid-winter Is a good time for an ice-skating party. Here are some recipes intended to satisfy the voracious appetites you get after sliding around on the ice for a few hours. Sandwiches au gratin are the most de luxe hot sandwiches created cre-ated to date. Sliced chicken on toast always was the best sandwich sand-wich made, but with a rich white sauce over it, baked in the oven with a sprinkling of cheese on top it almost steps out of the sandwich sand-wich class. , Menu I Cranberry Salad .' lea Sandwich! u Gratia Menu II Rolled Sandwich Ollvai Grilled Almonds Spiee Cake Hot Chocolate Cranberry Salad t eupi cranberrlea Vi cup diced Vi cup water npplee 1 cup auirar Vt cup diced I tbp. gelatin celery noaked in t tbap. M cup chopped cold water nuta Creamy Salad Draining Cook cranberries In water and put through colander Add sugar and gelatin to hot pulp and stir until dissolved. Add apples, celery cel-ery and nuts and pour into Individual Indi-vidual molds to set. Serve on lettuce or cress with Creamy Salad Dressing. Yield: 6 servings. Sandwiches au Gratin Make sandwiches of toasted I bread and thin slices of cold chicken or turkey. Cut Into til angles and place in buttered individual indi-vidual baking dishes. Cover with a medium white sauce made of 3 tbsp. butter, 2 tbsp. flour, 1 cup evaporated milk, 1 cup water and tap. salt. Add a layer of grated cheese, sprinkle with paprika and bake In a moderate oven (S50 K.) until cheese Is slightly browned. Frankfurters In Unseasoned White Sauce I tbap. butter H cup watw 1 tbap. flour I frankfurter! Vi cup evaporated milk Make a white sauce of the butter, but-ter, flour, evaporated milk and water. Add frankfurters and cook in double boiler tor 15 minutes. Rolled Sandwiches Remove crusta from loaf of sandwich sand-wich bread. Cut into thin slices the length of the ioaf with a very sharp knife. There should be 9 or 10 long Bllces. Spread each slice evenly with creamed butter to which finely chopped parsley has been added. For 9 such bread slices it will take about 1V4 cup butter and cup chopped parsley. Cream cheese, softened with evaporated evap-orated milk, may be used in place of butter. Roll the slices and wrap them firmly in a clean cloth o.-towel. o.-towel. Put in a cold place for several hours. When ready to serve cut each roll crosswise into thin slices. Each roll makes about 6 sandwiches. Hot Chocolate t eq. bitter choco- t cupa bolllns late water 1 cup hot water Plncb aalt H cup eugar . K tap. vanillaa I cupa evaporated milk Melt chocolate In top of double boiler over hot water. Add hot water and cook directly over flame until smooth and thickened, about 3 minutes. Stir continuously. Add sugar and milk, that has been diluted di-luted with tbe boiling water. Cook 5 minutes longer over hot water. Add salt and vanilla. Whip with Dover beater and serve Immediately. Immedi-ately. Yield: 6 servings. |
