Show SUBSTITUTE FOR FOTATOES I Throughout the South a new vegetable vege-table is rapidly appearing in the market mar-ket to take the place, to some extent at least, of the potato. This is the dasheen, a tuber introduced by the department de-partment of agriculture from the tropics. trop-ics. It resembles the potato in many respects and in many tropical and eub-tropical countries displaces it entirely. en-tirely. Experiment has proved that he dasheen can be easily grown In tho th and Soutb-.vest. where It promises to respond to cultivation j even better than the potato. It is not- ' able for a peculiar nutty flavor and the young leaves, when properly-cooked, properly-cooked, make an excellent substitute for spinach. Neither tuber nor leaves, however, should ever be tasted when raw. The acrid principle, characterizing characteriz-ing the plant can be neutralized only by cooking a while. In preparing the dasheen, a teaspoonful of sal soda to a quart of water prevents the hands from being affected by the irritant. |
