Show Mushroom Patties- Sift six ounces of flour, rub in three ounces of butter and mix Into a paste with the yolk of an egg. Roll out thinly thin-ly and cut into rounds and put Into patty pans. Fill with dried peas, cover with another round of paste, brush over with a beaten egg and bake for twenty minutes. While the tarts are cooking peel one-quarter pound of mushrooms, fry them In butter, then drain and chop up finely, mix with a little cream and season with salt and pepper. Take the tops of the tartB off, fill with the muRhroom puree and serve with fried parsley. |
