Show CHEESY OPEN-FACE SANDWICHES, COLD MILK SATISFY APPETITE AFTER FOOTBALL GAME Anyone who has ever attended a football game knows that an afternoon of cheering for the team leaves a person ravenously ravenous-ly hungry. Healthy teenagers swarm home to raid the refrigerator. Chances are Dad and Mom follow close on their heels. Prepare for this onslaught in advance. Plan refreshments of hefty open-face sandwiches to be served with fat mugs of ice-cold ice-cold milk. Use two different spread combinations ham and blue cheese, cheddar cheese and crabmeat. The spreads are simple to make. And simplicity is important impor-tant in the Saturday morning pre-game rush. Store the spreads in the refrigerator. Most any kind of bread, rolls, or buns go well. In the photograph, photo-graph, the tops of hard rolls have been hollowed out and filled with ham and blue cheese spread. Halves of hamburger buns are covered with cheddar cheese and crabmeat spread. The ham and Blue cheese combination suits a lad's taste, while the other spread is more to a lass's liking. The flavor of cheese speaks out in the former for Blue cheese is notably piquant. The cheese-crabmeat mixture tastes similar to a light salad. Fresh tomato and cucumber contribute to this saladlike touch, and their flavors blend nicely with those of sharp cheddar cheese and crabmeat. HAM AND BLUE CHEESE SPREAD VA cups 1 cup ground cooked ham Yi cup crumbled Blue cheese 2 tablespoons mayonnaise 2 tablespoons pickle relish 1 tablespoon lemon juice 2 teaspoons prepared mustard Combine all ingredients and mix well. Use as is for a sandwich sand-wich spread or hollow out French rolls, fill them with the spread and broil until cheese melts. The sandwiches may be topped with additional crumbled Blue cheese if desired. CHEDDAR CHEESE AND CRABMEAT SPREAD 2 cur-j 1 G'A oz. can crabmeat 1 medium tomato, diced 1i cup coarsely chopped cucumber 1 teaspoon salt teaspoon pepper 2 tablespoons mayonnaise 1 cup shredded sharp Cheddar cheese Flake crabmeat and remove cartilage. Combine with remaining re-maining ingredients, mixing well. Use as a sandwich spread as is, or spread on buns and broil. Top with additional shredded shred-ded cheese if desired. |
