Show Cowboy gets new owner Park City resident and Salt Lake City restauranteur Jay Graddick has become the major investor in Park City's Cowboy Bar, pending court approval of a Chapter 11 bankruptcy reorganization. reorganiza-tion. Graddick, who has lived in Park City for three years, will sublease the Cowboy from Paiute Oil and Mining Corporation, Cor-poration, the group which has been operating the Main Street bar. Graddick said he hopes to bring in a "name act" at least every two weeks. He has booked Tommy Overstreet for Aug. 18, and is currently looking for an act for the Art Festival weekend. Graddick operates the Brickyard seafood restaurant restau-rant in Salt Lake Citv's Brickyard Plaza. He said he plans to bring fresh seafood to the Cowboy, as well as including steaks on the menu. The long-range plans for the Cowboy include remodeling remodel-ing and enlarging. Graddick said that the plans will be drawn up for a $200,000 revamping of the bar, which will increase its size from 4,500 square feet to approximately approxi-mately 7,500 feet. With the city's approval of the plans, Graddick said the Cowboy could be expanded by 200 to 300 seats. "We want to upgrade the bar and the restaurant," Graddick said, "and make it something Park City will be proud of." He said he would like to make the Cowboy Bar a year-round dining and dancing establishment. |
