THESIS "food trains" which bear the gospel of food economy and preservation preserva-tion to the people of the country are a familiar sight these days. The railroads of the United States are doing their "bit" in giving the use of special cars to aid in tho good cause. The writer recently happened hap-pened to come across one of these "food specials." She found the demonstrntor and her assistant doing up their luncheon dishes und making various and sundry preparations for the afternoon. Both looked real homy, especially the head demonstrator, in her calico kitchen gown. I The early comer beamed at her and tried conversation, but with scaut success. I "Jot's get the dishes washed," said the j demonstrator to her assistant. The early comer liked her businesslike way nnd made la mental note that she was a good housc-I housc-I keeper. She had just the right snap, not j 'exactly cross, hut the domestic step-lively . I air without which no house can be well ' run. She sliced a beet deftly and the visitor, vis-itor, having copied a recipe about boiled salad dressing, let her eye rest on the admonitory motto, "Make economy fash ionable." "What are you going to demonstrate today?" to-day?" she asked. "Peas and huckleberries; one vegetable and one fruit." "Is thnt All?" "Yes. for the canning. I may give a few-dishes few-dishes besides." i "I think I'd better dress, some one else might be coming," said the assistant apprehensively. ap-prehensively. "I'll shell the peas afterward." after-ward." She disappeared to her boudoir somewhere some-where at the end of. the car nnd the demonstrntor dem-onstrntor deftly peeled and piled nnd placed things on her little counter nnd in an ice box. keeping an eye meanwhile on the kettle boiling on the stove behind her. "You can look at the canned things in the next car," she said pointedly to the visitor, who met at the door the next contingent of Indies seeking light on the abstruse mysteries mys-teries of putting up. |
