Show SPECIAL LIST OF RECIPES USED BY MRS.JARLING A special list of recelpes used by Mrs. Harriett L. D. Darling, of Ilrookllne, Masschusetts, homo economist econo-mist of international note, in her demonstrations de-monstrations of invalid cookery before be-fore tho housewives of Utah at the recent Housekeepers Conference hold in connection with the Farmers' Farm-ers' Ilound-up by the Extension Division of tho Utah Agricultural Collego at Logan, has been compiled by MIbs Oortrudo McCheyno of the Extension Division. These recipes aro prepared by tho following useful suggestions: Pay strict attention to cleanliness. Cook Individual portions. Do not fry Invalid's food. Do not use much fat. Do not over-sweeten. Mako out tho day's diet in advance ad-vance so that materials may be ordered or-dered and delays avoided. If possible pos-sible lot one person attend to the cookery. Tho moro Important recipes given follows: Orangei Albumen. 1 egg white Heat with sharp knife. 1-3 c. orange Juice add gradually to egg and strain over ice. 2 tbsp. crushed ice. Sugar. Sweeten if necessary. KgR iAMiionmle. 1 egg Dcat slightly, add all Ingredients. In-gredients. 2 tbsp. lomon juice. Vi c. cold wator. 2 tbsp. cruched Ice. Sugar or syrup. Strain over crushed Ice. Hoof Ton. 1 lb. round steak. 1 pint cold water. Cut meat in small pieces or chop It, discarding all fat. Placo with cold water In covered glass Jar. Place In a sucepan oT water Just boiling. boil-ing. Keep at 140 degrees for 2 hours. Strain off liquid, season with salt. Serve in hot cup. Cream of Celery Soup 1 c. milk, 3 Btalks celery cut In small pieces, cook 20 minutes In double boiler. 1 tbsp. butter, 1 tbsp., flour, cream to gether and strain milk over it. Add seasoning nnd servo with 1 spoonful of whlped cream. Orange Jelly. 1 tsp. gelatine Soak in cold water. wat-er. 1 tbsp. boiling water dissolve In It. 1 tbsp. cold water. U c. orange Juice, 2 tbsp. sugar Combine with dissolved geletlne. Mold, chill and serve with whipped whip-ped cream. Junket Custard c. milk, Up. brandy. 1 tsp. sugar, fow grains salt. Heat to lukowarm. U Junket tablet, 1 tsp. cold water. Dissolve In water. Stir quickly Into In-to mixture. Pour Into glass dish In which It is to bo served. Keep warm until set, then chill. Fricasseed Oyktern 1 qt. oysters Drain and waBh. U small onion grated into butter. 2 tbsp. butter browned In a pan. Add oysters, seaBon with salt and pepper. Stir until edges are curled. 4 tbsp. butter, 2 tbsp. flour. Cook with oystors 2 or 3 minutes. 2 egg yolks add chopped parsley par-sley add as taken from tho fire. Servo on toast or In pattio shells. Ojster 1 toast 1 pint oysters Drain nnd wash. Heat and season. U tsp. salt. 1 A little paprika. I 2 tsp. butter, i 8 BDuaro crackers, toasted, Lay In large enameled baking dish moist-enting moist-enting with hot seasoned oyster Juice. Lay threo oysters upon each cracker. Dot with bits of butter, sprinkle with a little pepper and lemon Juice. Set In hot oven about 8 minutes or until oysters are steaming steam-ing hot and edges slightly curled Sprinkle with chopped parsley and servo with slices of lemon. |
