Show Consul Hunt, stationed at St. Et-lenno, Et-lenno, Franco, reported not long ago that casein, the principal albuminoid matter ot milk, is now obtained by electrolysis. The milk is heated to SO degrees centigrade in a largo vat, in which is placed a porous vessel containing con-taining a 5 per cent solution ot caustic caus-tic soda; an iron cathodo is placed in tho soda and a carbon rod serves as an anode In tho milk. Upon sending through an electric current the phosphoric phos-phoric ncld in the milk is set free and casein is precipitated. This Is much cheaper than tho olll method of preelp- I Rating casein by tho uso ot acids or ' ronnet. Vegetable casein Is now be- I ing produced from tho soya bean, and it Is said that this material can bo put to tho samo purposes as animal casein. Casein is now largely used as a substitute sub-stitute for ivory, tortolso shell, celluloid, cellu-loid, etc. |
