Show V Ole Flapjack Weaver back in Town Janet Weaver " What better way to start out a cold winter day than with warm and yummy pancakes. They also make a quick and easy supper for a change of pace. Your family might think you are nuts; but after all why not live a little dangerously and break the monotony. One of these recipes is bound to hit a responsive chord with your family. Thank's goes to 12th Ward (and former 12th Ward) cooks for these yummy specialties. RICE PANCAKES BY Richard Payton Break 3 large eggs in large mixing bowl. Add 2 Tb. milk, 1 tsp. cinnamon and about one third cup raisins. Beat well; then add about 2 cups cooked rice. Add a pinch of salt while beating the eggs. Mix well, pour into frying pan and cook like pancakes. Serve with lots of butter and hot syrup. SPICE PANCAKES Lurana Mosell 2 cups bisquick mix 1 & two-thirds cup milk 1 egg 1 tsp. cinnamon ' tsp. allspice ''a tsp. cloves tsp. nutmeg Beat together and bake on greased griddle. QUICK HOTCAKES Klea Knight Shake in quart bottle: 1 egg 1 c. milk 1 c. flour 2 tsp. baking powder tsp. Salt 2 Tb. sugar 2 Tb. vegetable oil This can be stored in refrigerator indefinately. WHOLEWHEAT PANCAKES Charlotte Boyer 1 cup white sugar 1 cup whole wheat flour 3 tsp. baking powder 1 tsp salt , one-third cup brown sugar 1 '2 cup milk "4 cup oil 2 eggs Mix well and bake. BUTTERTHIN PANCAKES Beverly Neilson 4 eggs 3 cups half & half (cream) 2V2 cups flour 3 Tb. sugar 3 tsp. baking powder i! lb. melted butter Mix all ingredients except butter. Beat well, stir in melted butter and cook. CHOCOLATE WAFFLES Ruth Adams 'a cup shortening 1 cup sugar 2 eggs separated 1 Tb. cocoa 'a tsp. salt a cup milk 2 tsp. baking powder la tsp. vanilla 1 1 a cups sifted flour Cream shortening and sugar. Add well beaten egg yolks, mix thoroughly. Sift flour with baking powder, cocoa, and salt. Add alternately with milk to chocolate mixture. Add flavoring. Fold in stiffly beaten egg whites. Bake in hot waffle iron. Serve topped with fruit cocktail and whipped cream. |
