Show HOW TO USE I SUBSTITUTES Housewives Should Know That One Cup of Substitute Does Not Always Al-ways Equal One Cup Flour. Housewives sometimes, after one or two failures to make as good bread, cake or pastery from substitute substi-tute flours as they used to make from the good old high patent, declare they "simply can't use subtitutes." Their failure may be due to many items, but most often, probably, to the use of wrong quantities of substitute. It is not generally known that substitutes substi-tutes cannot take the place of wheat flour volume for volume, but must replace it weight for weight. The Extension division of the Utah Agricultural College has prepared the following table showing the a-mounts a-mounts of various substitute flours necessary to replace one cup of wheat flour. In substituting for one cup of flour use the following measurements: Barley - 1 cups Buckwheat ...- cup Com Flour 1 cup (scant) Corn Meal (coarse) Tfccup Corn Meal (fine) .... 1 cup (scant) Peanut Flour 1 cup (scant) Potato Flour 4 cup Rice Flour cup Rolled Oats 1 cups Rolled Oats (ground in meat chopper) 1 cups Soy Bean Flour ... cup Sweet Potato Flour . . lVs cup Sweet Potato Flour .... lVs cups... This table will help you to make good griddle cakes, muffins, cakes, cookies, drop biscuits, and nut or raisin bread without using any wheat flour. You will not need any new recipes. Just use the ones your family has always al-ways liked, but for each cup of flour use the amount of substituet given in the table. You can change your muffin muf-fin recipe as follows: OLD RECIPE 2 cups wheat flour, 4 tablespoons baking pouder, V4 teaspoon tea-spoon salt, 1 tablespoon sugar, 1 cup milk, 1 egg, 1 tablespoon fat. NEW RECIPE 1 cups barley flour, 1 cup (scant) corn flour, 4 teaspoons tea-spoons baking powder, teaspoon salt, 1 tablespoon sugar, 1 cup milk, 1 egg, 1 tablespoon fat. The only difference is the substitution substi-tution for the wheat flour. Everything else remains the same. You can change all your recipes in a similar way. JL' U U |
