The weight of an ordinary new laid hen's egg is from one and a half to two and a half ounces avoirdupois, and the quantity of dry solid matter contained in it amounts to about two hundred grains. In 100 parts about 10 parts consist of sholl, OOof white and 30 of yolk. The white of tho egg contaiua a larger proportion propor-tion of water than the yolk. It contains no fatty matter, but consista chiefly of albumen in a dissolved state. All the fatty matter of the egg is accumulated in the yolk, which contains relatively a smaller proportion of nitrogenous matter and a larger proportion of solid matter than the white. Therefore, in ail alimentary alimen-tary point of view, tho white and the yolk differ considerably from each other, the former being mainly a simple solution solu-tion of albumen, the latter being a solution solu-tion of a modified form of albumen, together to-gether with a quantity of fat.
