Show Young brides (anyone who is not accustomed to preparing meals, for that matter) often have trouble getting everything ready at the same time hot foods, hot, cold foods, cold. This comes with experience, of course, but even more important to success in this respect is advance planning. When trying a new recipe, rec-ipe, for example, read it through carefully, make sure you have all the ingredients, and think through the steps before you begin. It's a nuisance to have to go to the store for an ingredient you lack for a recipe, so here are some helpful substitutes to keep in mind: For one cup heavy cream you can substitute 34 cup milk plus 13 cup melted butter or margarint, For one cup light cream, substitute sub-stitute 34 cup milk plus 14 cup melted butter or margarine. For I cup sour cream, substitute substi-tute 78 cup plain yogurt or buttermilk but-termilk plus 3 Tbsp. melted butter for one cup buttermilk, use one cup whole milk plus one Tbsp. lemon juice or vinegar. (Add one tsp. melted butter if using 2 milk.) For one cup whole milk use 12 cup evaporated milk and 12 cup water. For one cup half-and-half use 78 cup whole milk plus 1-12 Tbs. melted butter. For one cup honey, use 1-14 cup granulated sugar plus 14 cup water. For 12 cup catsup or chili sauce, use 12 cup Tabasco sauce plus I Tbsp. EACH sugar and vinegar vine-gar and a dash of ground cloves. For lemon juice, substitute HALF the amount of white vinegar For liquid hot red pepper seasoning sea-soning substitute cayenne pepper to taste. (Be careful. It's hot.) For one Tbsp, prepared mustard, mus-tard, substitute one tsp. dry mustard. mus-tard. For tartar sauce, substitute mayonnaise with sweet pickle relish How Much Will It Yield? One half pint heavy cream will yield 2 cups whipped cream. One pound flour equals 3-12 cup unsifted or 4 cups sifted flour. One lemon will yield 3 Tbsp. juice and one Tbsp. grated rind. One pound unshelled pecans will yield 2-V2 cup chopped nuts. One pound unshelled . walnuts will yield 1-23 cup chopped nuts. One pound powdered sugar equals four cups (unsifted.) One pound granulated sugar : equals 2 cups. Dear Vi: I read in your column about a lady eating a raw potato every day for seven days for kidney infection. Can you find out more about this? She said she eats a raw potato almost every day and that this also seems to be helping her varicose veins problem. At least, her legs feel better than they have for years. She prefers baking potatoes because they seem to taste better but she eats only a half because they are so large. Lime juice makes them taste better she says and it also keeps the cut, edge of the remaining potato from turning dark. I would suggest letting let-ting the way you feel dictate how long you should continue with this simple remedy. Good luck and good health to you.
