The reason Nouveau wines can be ready for the consumer much sooner than traditonal wines is a result of the process used to make them. Nouveau, and Beajolais in general, are produced by a process called “carbonic maceration.” This process, whole berry also referred to as fermentation, creates wines that are lower in alcohol and total acidity and lighter in color and crush the ones below, throughout the whole vat, causing the grapes to.fermentin. whole berry clusters. Once this is complete — any- where from one to 10 days — the gtapes are then pressed to release the wine that has been created inside the grape cells. This is followed by a more conventional alcohol fermentation lasting about two days. Finally, the wine is filtered, cold and heat stabilized, bottled and shipped to the marketplace just a few weeks after harvest. Typically, Nouveau wines have a very fruity aroma and flavors of ripe cherries and raspberries. Because the attraction of these wines is their youthful fruitiness, most Nouveau is drunk within six months of being bottled.
