The upper surface of the leaves has short prickles, and the undersurface is covered with white hairs. The flowing stem is about four feet high, with prickly wings. The stem leaves are smaller than the rosette leaves, but otherwise similar. The flowers are all tubular and purplish. The thistle is a native of Europe and Asia but emigrated to this continent with the early settlers, partly mixed in with agricultural seed. In Europe, the thistle was n used as a potherb and to the Greeks and the Romans. well-know- Despite the unlikely appearance for an edible plant, this rough looking vegetable makes a delightful dish when properly prepared. My main reason for including it is its value as an emergency food. When the food supply is getting low, it is easy to recognize, and people scared of poison plants don't have to worry. The thikle is a pest in most parts of the country, so it should be no trouble to gather enough to live on for weeks. For instance, the Canada thistle occupies millions of acres of range and woodlands across the northern states and Canada. And the yellow star thistle is spreading in the central California and threatens to win many thousands of acres of foothill pasture. Try our recipe for Baked Fish with Bull Thistle Stuffing.
