Farm Bureau officers from the Western States gathered in Salt Lake City, February 26th and 27th to discuss political education. Markets For Red Meat Utah people will consume 236.6 million pounds of red meat by the year 1975. Utah State University economists made that projection of expected market demand for beef, veal, lamb, mutton and pork within the state as they concluded a recent study of opportunities for expanding livestock feeding and meat packing in the stat. Dr. Morris II. Taylor, USU extension marketing specialist, pointed out that Utahs expected consumption of red meat by 1975 represents a 20 percent increase over 1968. In the same period, the market in the 11 western states is expected io expand to require 21.6 percent or 1.3 billion pounds more red meat. In that time, California's population is expected to require nearly 24 percent or 900 million pounds more red meat. The total U.S. and International markets for red meat are also expected to grow. However, the population growth projections indicate that demand for red meat is Hog Former Wins Air Pollution Case By Jake Fuhrlman Over a year ago we reported to you the case of the New York State hog farmer who was ordered by the state health commissioner to eliminate the smell of hogs on his farm, confine it to the farm, or cease operation. The New York Farm Bureau took the lead in a legal fight against the decision. The New York Supreme Court has now ruled that the health commissioner overstepped his bounds. The court pointed out that the commissioners action was based on a purely subjective analysis and that the health department had not compiled with the legislative Intent which requires the development of standards of measurement. However, the court warned that once the health commissioner had developed a comprehensive plan designed to establish a degree of air purity, the department will then have the authority to Insure that air purity levels established are maintained. The State health department has established a council of agriculture advisors, to aid the department in laying down rules and regulations regarding the application of the air pollution code to farm operations. A member of the New York Farm Bureau board of directors is chairman of this council of advisors. We feel that this case still leaves more questions unanswered than it answers. How do you establish a standard tased on smell? Whose nose do you use? As we all know, what smells liad to one person may smell good to another. Are hogs the only smell that is tad? What about refineries? Steel mills? Horses? Other people? Cigarettes? Cigars? The list is endless. Anti pollution is the In thing now. but we feel that there is need for calm, and reasonable thinking, before we get stampeded into a lot of silly rules and regulations. in other parts of the United States. Therefore, Utah cattle feeders and meat packers located in the center of this growing market area, have a locational advantage of lower costs to supply meat for the area. Whether or not we in Utah can actually capitalize on this market growth potential will depend on how well we develop the production and marketing patterns essential to in meat production, processing and distribution in neighboring states and other areas of the United States are also designed to capitalize on this growing market. The interstate and inter -- regional competition dictates that economics of size and scale in feeding operatons must be emphasized. This means developing a commercial industrialized type of feeding business. It also requires more attention to competitive operating efficiency of meat processing plants, Dr. Taylor said. compete for these markets.
