In fact, according to Vegetarian Times magazine, research studies from as far back as the 1970s show a low-fvegetarian diet can help prevent heart disease, diabetes and some kinds of cancer and may lower high blood pressure. Whats more, as athletes have found, a vegetarian diet is the way to go for muscles, strength and endurance. High carbohydrate, meatless pasta is the meal of choice of runners, delivering slow, sustained, energy without excess fat and calories. Heres a recipe that can help you leant some of the joys of a vegetarian diet: Fettucini Alfredo Low-F- This version is much lighter than the original classic, but it loses none of the rich character. 12 oz. dry fettucini, preferably whole wheat 2 cups evaporated skim milk or low-fsovmilk (or 12 cups powdered skim milk mixed with 12 cups water) 4 cloves garlic, minced or pressed 6 Tbs. grated Parmesan cheese 14 cup chopped fresh parsley Freshly ground black pepper to taste 2 cups chopped and steamed vegetables of choice: carrots, green beans, zucchini, onions, broccoli or peas Cook pasta according to package directions. Absent meaningful reform of the health-car- e system, this could result in the closing of scores of VA hospitals and clinics, the firing of tens of thou-- j sands of needed VA health-car- e employees and deny- ing care to a million sick and disabled veterans, said Richard Grant, national president of the Paralyzed Veterans of America. Even though our country faces tough budget problems, this survey confirms that the American people feel veterans health care and benefits are a national priority that must not be ignored or minimized, said Grant. The survey shows overwhelming comsupport for programs like veterans disability beneand death service-related injuries pensation for fits for widowed spouses and dependents. The survey also found: 66 percent of those expressing an opinion who knew someone who used a VA hospital in the was as good or past two years reported the care better than other hospitals; 62 percent of those expressing an opinion felt Congress spends too little to maintain the quality of care veterans receive at VA hospitals; and, Support for increased funding of veterans programs is strong across all generations.
