These have a definite ripenirg span and must be eaten at the rignt point. Brie is best bought from a store where they cut slices from a wheel. Like this, you can see the condition of the cheese before you buy it. Any cheese should have a firm, creamy paste inside. If it has a chalky band through it, the outside will become overripe and taste of ammonia before the chalky center has time to mature. If the paste is and runny, the cheese is already past its prime. All soft cheel 3 is usually eaten with bread or fruit.
