1 Chef 70 Says He’s Too Young to Hang Up His Skillet Carl Morgan never planned to be a chef But now after 50 ears of stirring and sauteing he can’t stay out cf (he kitchen manifestations Optical Illusions Art J I Cards & Framed Pictures I Drop in and see our complete line of decorating accessories and gifts J I GxzEtzsidz GatCzxy 571-937- and td estate J 10203 I OFF o jG ifts By Walt Schaffer Tribune Staff Writer LAYTON — Carl Morgan turns 70 years old this month but don't expect him lo act his age He still rises from his bed each morning at 5 a m to prepare for a full day 's work and following a drive he’ll be bustling around a Davis County restaurant kitchen slicing meats sauteing mushrooms whipping chocolate mousse and stirring (he Dijon sauce It's his career but not necessarily the career he desired "Heck I never planned on becoming a chef" he says “When I began cooking more than 50 years ago a chef was looked down upon by the general public It's only been the last 10 years that food service has received its due recognition It's actually more difficult to become a chef than it is to become a doctor" he claims "There are more spices and herbs than there are bones in the human body "No 1 didn't plan on cooking for a living Not until I discovered that grown men would pay me money for it" he explains "A paycheck gives a person a little different perspective" The perspective has its roots in the late 1930s when as a restless and amMr Morgan took bitious a job for 10 cents an hour at a "ham burger and chili joint" in rural Kentucky A short time later deciding to see the world he moved West with stops in Las Vegas Los Angeles Elko and Salt Lake City Along the way he worked as a lumberjack and assorted other hard-labo- r jobs but more often than not he ended up behind a grill “Times were tough and job opportunities were rather soft for an uneducated man like myself” he recalls "Since I enjoyed cooking I decided to learn it as best as I could" After his stay on the West Coast Mr Morgan returned to Salt Lake prompted partially by a desire to become reacquainted with a girl he had met on his first trip through the Utah capital It was 1940 and he sought work in his unchosen profession He soon landed jobs at Sutton's Cafe on Main Street Joe Vincent's Restaurant on Second South and the at Lamb's Grill on Main Street Later he worked as a chef at the Remington Arms plant when Uncle Sam came calling with orders to join the kitchen staff at the Wendover air base He then headed the bakery at the Navy Supply Depot in Clearfield r Following the war he moved to City where operated a motel and restaurant and received training for his next opportunity as food and bev- He-be- erage manager for an Idaho motel chain Then it was on to bigger and better things as Mr Morgan became corporate chef for Western states units of Pearson Enterprises operators for the Salt Lake Hilton and the Tri-Ar- Hotel Then came retirement It didn't last "I retired Tor an entire three months" he said "H°ck it was the worst three months of my life I drove myself crazy and everybody around me crazy" So he went back to work as general manager of the Homestead near He-bconsultant City and as a part-lim- e to a food brokerage firm in Salt Lake In 1985 Layton restaurateur Hersh Ipaktchian began planning the Peppercorn Restaurant One of his first calls was to Mr Morgan "I was looking for a young guy with experience" says Mr Ipaktchian "And Carl is the youngest-actinman I know" As executive chef at the Peppercorn Carl is involved with menu planning and food preparation He still carries his reputation as a traditionalist "The trouble with this business nowadays” says Mr Morgan "is that there are too many damn pencil pushers Food service is loaded with high-paiguys that sit in offices and make g back-to-basi- d desk" And that's not his only negative observation about corporate restaurant units "The accent is too often on the fancy frills Many of the newer chefs start at the middle instead of at the bottom" he explains “It’s not enough to attend a culinary institute and learn how to make an ice carving You should learn how to grill a ham- burger first" He said it takes at least 10 years before a chef is really trained Mr Morgan believes that the key to a successful restaurant will always be the same offering good food at a good price "The mark of a good chef is a guy that makes money for his company and gives a dollar's worth of food and enjoyment for every dollar the customer spends" he points out The kitchen calendar at the Peppercorn lists Mr Morgan's birthday with a "Big 70" notation But the listing has since been scratched out with "Age 39” substituted "I changed it on the calendar" says the chef "I don't think I'm really 70 That’s too darn old for a young guy like me" Spring is on the Way!
