Lstesi tablespoon butter or margarine V cup finely chopped celery 4 cup finely chopped green pepier 3 eggs, separated, and at phuii temperature 2 teaspoon salt h teaspoon poultry seasoning Few grains pepjier 4 cup milk 2 cups soft bread crumbs 3 cans di1" ounces each' tuna, well drained and flaked Pimiento-MushrooSauce Heat oven to 350 degrees. Melt butter in small skillet over moderately high heat. Add celery, green pepper and onion; cook until celery is crisp-tendeSet aside. In a mixing bowl slightly beat egg yolks with salt, poultry seasoning and pepper. Stir in milk. Add bread crumbs, tuna and celery mixture; mix well to blend. Beat egg whites until stiff. Fold egg whites into d tuna mixture. Turn mixture into a 42 x 2 inch loaf pan. Bake, uncovered, one hour. Serve immediately or store in refrigerator, covered with foil, from one to five days. To serve, heat oven to 350 degrees. Place covered loaf in oven and reheat 30 minutes ; uncover and heat 15 minutes longer or until loaf is at serving temperature. Serve loaf sliced and topped with Pimiento-MushrooSauce. Makes four to six servings. Pimiento-MushrooSauce 1 can ( 10 2 ounces) cream of mushroom soup 2 cup milk 1 teaspoon chopped, canned pimiento In small saucepan blend all ingredients. Place over moderate heat and heat to serving temperature, stirring frequently. Makes about Iks cups of sauce. 1 .
