Hit Suit Dear Tom: Yes, soybeans are a good food, and they are also a fine source of protein And they certainly do help out down the amount of saturated fat you get in your diet. You might be interested in a recent report indicating that soybean protein may have a positive effect on lowering cholesterol not just indirectly by cutting down on the amount of saturated fat you are getting. Tliis information is based on a study done by five Italian experts in Milan and written up in Lancet a short time ago. The Italian doctors found that a group of 20 patients with an inherited problem improved greatly when a soybean textured protein was substituted for animal protein. While on the soy diet, the patients' cholesterol level was down by 14 percent after two weeks and by 21 percent after three Both diets soy protein and animal protein were low' in saturated fat and cholesterol. The five researchers note that there are other studies showing that people who rely mainly on vegetable proteins have lower cholesterol levels than the rest of the population Of course, all this dees not mean that you should give up meat entirely and become a vegetarian. But there is certainly nothing wrong with trying soy as one source of protein now that you are advised to cat less meat. Dear Dr. Solomon: Do you think eating all the time could mean youve got some sort of hang-uabout p nearly half of the obese patients they were seeing admitted they ate too much because they wore afraid of sex. Dear Sophie: Xylitol is a substance that is present in small amounts in some fruits and vegetables. It is about as sweet as sugar and has approximately the same number of calories. And it has already been used for a number of years as a food additive The only adverse effect you get from rating xylitol, according to the authoritative "Medical letter,1' is a transient bout of diarrhea but you would have to consume an awful lot for this to happen. Studies done in Finland have shown that when xylitol is substituted for sucrose, (sugar), there is cpiite an impressive reduction in cavities. This may be due to the fact that a germ called streptococcus mutans, which has been linked to dental plaque and cavities, cannot live on xylitol whereas it does thrive on sugar.
