She knows just how to mix and match flavors to make rhapsodies of good eating while using every part of the beef. Theres no reason why every bit of the beef cant be utilized and enjoyed, Gwen said enthusiastically. Its fun to take the less expensive cuts and w ork with them to come up with sensational results. And it can be done! LaMar and Gwen have five children, Jeanne, Lee, Lloyd, Mark (serving on a mission for the LDS church in South Dakota) and Mary. Gwen was preparing Savory Stuffed Round Steak for LaMar and their family to enjoy for dinner. This has always been a favorite in our family. The good beef flavor complements dressing and mushrooms without cloaking any of the goodness. At the present time, LaMar is serving as president of the Utah Cattlemens Assn. He is also a director for the National Cattlemens Assn. Gwen gives her support by taking an active part in the local CowBelles Assn. We are definitely a beef family in every way. And how we like having beef on the dinner table. F or the past eight years, Gwen has been teaching in the Head Start and Program in Fillmore. Since 1 have been working, I have had to learn to go the short-cu- t way. I have trained myself to start dinner the night before so that when I return from school, all I will have to do is pop the dish in the oven and let it bake to bubbling perfection. SC1PIO, g ... Menree) 1 large beef round steak 2 cups favorite bread dressing to cup sliced onions Salt and pepper to taste 1 cup sliced mushrooms V at Flour ''" KSiry - K - f - cool. Prepare dressing. Spread! dressing on browned meat and roil up as you would a jelly roll. Secure with toothpicks and tie with cord. Place in casserole dish. Add to cup water, cover and bake at 350 degrees for one hour. Saute onions and mushrooms. Add to meat drippings. Heat to boiling and thicken with cornstarch or flour. Serve gravy over meat rolls, garnished with onions, mushrooms and cooked green beans. Stuffed Round Steak (Mi's. Jacqua Williams) 4 slices bacon, diced onion, chopped lto cups toasted bread cubes (3 slices bread, cubed and toasted) 2 tablespoons minced parsley to teaspoon celery salt to teaspoon sage 2 to 2 pounds round steak, cut into 5 portions to teaspoon salt to teaspoon pepper 1 cup beef bouillon 1 can (8 ounces) tomato sauce Minced parsley for garnish To make stuffing, saute bacon with onions. Mix in toasted bread cubes, parsley, celery salt and sage. Sprinkle steak with salt and pepper. Spread each portion of steak with stuffing and roll up. Secure with toothpicks. Place in large skillet. Pour bouillon over ; cover and simmer one hour. Add tomato sauce. Replace cover and simmer an additional 45 minutes or until done. If gravy is too thin, cook, uncovered, until of desired consistency.
