Brown, Publisher and Editor SUMMONS Civil No. 1138 UHi Entered as second-clas- s matter October 6, 1944 at the post offioe ia Kanab, Utah, under the Act of March 3, 1879. THE ROVING REPORTER SE- Z- Well we've had a school lunch program for a whole school year now and none of the dire predictions by a lot of pessimists have come true. Many school people told me, the lunch program is a big headache you II be sorry it will never go over in Kanab. You'll spend half of time your supervising it. The kid's will eat for a time and then you'll be left with a big kitchen full of expensive appliances and no one to cook for" etc. etc. Maybe the pessimists didnt realize what a fine manager we had in Mrs. Barbara Hamblin or what a fine staff of cooks we have or what support we've had from Supt. Swallow and the administration or the work of our secrethe super kids we have tary and teachers or the support of the parents. At any rate, we haven't had any problems we couldn't solve haven't been late for a single meal and we've served never ran out of food nearly 52,000 of them never had to eliminate anyone for misbehaving never spoiled or burned a meal and never stopped worrying that we'd do some or all of these. It's a big job we feed 350 kids a meal for ...that costs about 65c and we feed them in a little over an hour the teachers, the cooks and even ye olde principal pay 40c a meal do get a cookie and a pat on the (Sometimes, head for free). We deal in large amounts of food, too. Here's a typical day: 30 lbs. of flour for hot rolls; 20 lbs. of floor for cookies; 150 lbs. of potatoes for French fries; 14 gallons of vegetables; 40 lbs. of lettuce; 13 lbs. of jello; 150 lbs. of chicken or turkey and 350 half pints of milk. All of the kids love Tacos. Here's a recipe that you mothers might like to try. For TACOS take: 60 lbs of ground beef; 20 lbs. grated potatoes; 10 lbs. grated onions; Vs cups salt; V2 cup MSG; V cup pepper; 3 gallons water; cook for 3 hours; top with 15 lbs. cheese and 25 lbs. lettuce; feed to 550 hungry children. Some pet peeves: Kids that are rude and don't know how to say "thank you" or "please"; the high school girl that calls the food 'slop' but always eats two large portions of it; receiving a call from the high school that there would be 115 students down to eat and then 175 show up; getting a hurried-ucall that 75 band students from South Sevier would be here for lunch and then getting a call at 12 o'clock that the bus had broken down; the high schoolers who ask for a second orange so they will have two to throw at each other on the way back to school; the kid who wastes napkins and that many drinking straws. We'd perish without our custodian, Chad Cram. He cleans and repairs the equipment and he's called on about daily for lots of little emergencies. It's a great program and we're glad that some PTA officers got interested and got the idea started. It'll even be better next year 'cause now we know how. 25c-30c.- ..
