Muffins can be used in a variety of ways, from a side dish to the mainstay of the meal. They make 'delicious brunch and can be made in all sizes from dainty to mixed. They should look lumpy before baking. The liquid ingredients arc used to just dampen the dry ingredients. Usually the best way to remember not to overbeat is to combine 4he dry ingredients in a bowl then make a well or indentation in the center. The liquid ingredients are Combined, then added all at once, i Stir quickly just until the dry ingredients are dampened and then stir four or five more Strokes. The total shouldnt be Snore than about 20 or so strokes Tor best results. 1 1 make it impossible to bake fresh muffins, they can be made ahead and frozen for future use. To reheat muffins in a conventional oven, place thawed muffins in foil and seal. Pineapple Muffins (Note the difference in mixing the batter) 2 C. flour 3 tsp. baking powder Vi tsp. salt Va C. butter Vi C. sugar egg, beaten C. milk 8 oz. can pineapple chunks, drained 1 I C. all purpose flour 3 tsp. baking powder 1 1 tsp. salt 1 C. whole wheat flour 4 Tbs. brown sugar, packed Va C. chopped dates 1 C. milk 1 2 Tbs. sugar mixed with 1 tsp. cinnamon Sift together flour, baking powy der and salt. Cream butter and blend in the 'U C. sugar. Add egg and beat until smooth and fluffy. Add dry ingredients and milk alternately beginning and ending with flour, beating well after each addition. Spoon batter into well greased muffin cups, filling each about half full. Place one or two drained pineapple chunks on top of batter and sprinkle with the mixture. Add brown sugar and dates and mix egg Vi Whole Wheat Muffins 1 flour Tbs. sugar Vi tsp. salt melted bacon drippings Sift flour together with salt, baking powder, and sugar. Stir in cooked bacon. Beat egg and combine with milk and melted fat. Add to dry ingredients all at once. Stir until just dampened. Do not overstir. Spoon into greased muffin full. Bake at pans, filling each 425 for 20 minutes, until nicely browned. Makes 12 muffins. Combine 2 slightly beaten eggs, C. orange juice, Tbs. grated orange peel, and V5 C. oil.
