Resembling a speckled tortilla and made from potatoes, lefse used to be commonly served in Norwegian-America- n homes. Now that more women ate working it is becoming a delicacy, only made on special occasions. wegian dishes. Her first attempt at making lefse was in Japan where her family lived for several years. My oldest son invited his Scandinavian friends over to have some lefse. Id seen it made, by relatives, but up to that point Id never made it myself. I learned mighty fast and have been making it ever since,: Lefse is only one of many Norwegian dishes, Mrs. Seath makes. A typical Christmas Eve dinner at her house begins with , , just dont have time to make lefse except for our Sons of Norway booth at the YWCA I Food Fair and for Christmas, said Maizie Seath, a Roy resi i 1 W , X w. Mrs. Seath is pleased that her daughters want to maintain the tradition. .When my children were younger I gave them cookie irons at Christmas hoping they would make Norwegian specialities in their homes. . The irons are used to make rosettes, a sweet treat that has become widely popular. Mrs. Seath also makes krumkake, a cookie baked in an appliance similar to a waffle iron and spritz, a butter cookie formed with a press. Although she works hard to preserve her ethnic culinary heritage, Mrs. Seath is unable to recreate one of her favorite food memories - a genuine Norwegian smorgasbord. When I was in college in Decorah, Iowa, nearby churches used to invite students to provide entertainment. Our pay was to eat from their smorgasbord. Her memories are revived each Christmas at lefse baking time when she turns her kitchen into a line to produce treat. Its more the tortilla-lik- e fun to make when you have someone helping you. One person rolls while the other cooks. Comparable to having bread or rolls, lefse is usually served with butter and sugar, although some people prefer jelly. They say you can tell what part of Norway people are from by what they put on their lefse, said Mrs. Seath. Some areas even serve hot dogs with lefse wrapped around them. ), , mini-assemb- iSK A s ' tv Holiday Dining of dough. Roll thin on floured pastry cloth with cloth covered rolling pin.
