GEORGIA MAKES the fruit loaf with whole wheat flour and it has a delicious flavor, although it is not light and fluffy as some cakes are. The brown sugar, spices and raisin mixture with applesauce added and a few nuts, makes a delicious loaf. She has given several recipes all using whole wheat flour which her family likes best. GRAHAM CRACKERS ': cup margarine 23cup brown sugar, firmly packed 2V cups whole wheat flour 'h tsp baking powder ' tsp cinnamon 'h cup water CREAM MARGARINE with sugar until fluffy, add re- maining ingredients alternately with water and mix well, let stand for 30 minutes. Roll out the dough on a floured board to inch thick and cut into one inch squares, put on oiled baking sheet. Bake at 350 degrees for minutes until lightly browned. Vt l1: cups raisins I cup water l5cup oil cup brown sugar I1: tsp nutmeg ': tsp cloves ': tsp cinnamon tsp soda 2 tsp water 2 cups sifted whole wheat flour tsp baking powder tsp salt ': cup applesauce cup nuts, chopped 1 1 1 oil. brown sugar, nutmeg, cloves and cinnamon in sauce pan and simmer for three minutes. Cool. Dissolve soda in the 2 tsp w ater and add to cooled raisin mixture. Sift the whole wheat flour with baking powder and salt and add to mixture. Beat until smooth and add applesauce and nuts. Spoon into a greased loaf pan lined with w axed paper and bake at,325 degrees for 0 minutes. If desired, bake at 350 degrees for a little less time, until done. Glaze with a thin powdered sugar frosting if desired. 50-6- COMBINE ALL ingredients a blender jar and blend for one minute. Scrape down sides with rubber spatula and blend again for 15 seconds or until smooth. Fry as for regular crepes, a tablespoon of batter fried in an oiled skillet, turn once. This makes about 18 to 22 crepes which may then be filled with various fillings. Store in a container in the refrigerator. Pancakes can be made from this mix by just adding milk to the right consistency. Georgia thinks the mix is best for pancakes and not so good for regular biscuits. An egg could be added to the pancake mix, but is not necessary. WHEAT FLOUR CREPE BATTER 2 eggs cups milk in 1 MIX RAISINS, water, tsp salt W 1 HOLE WHEAT PIE CRUST cup freshly ground sifted whole wheat flour 3 Tbsp butter 2Tbspplus 2 Tsp shortening Tbsp cold water CUT BUTTER and shortening into flour using pastry blender. until crumbly. Add cold water a little at a lime, mixing quickly and evenly with a fork until dough just hold in a ball. Roll about inch thick between w ax paper or on a pastry inch pie pan cloth. Line an extending crust a ': inch over edge. Crimp edge and prick with fork. Bake at 450 degrees for minutes until light brown. Any type of soft one crust filling may be used.
