One of the present-da- y treasures at the hotel is young and handsome Anton Mosimann, maitre chef de cuisine. Born and educated in Switzerland, he won his Diploma de Cuisinier at the age of 17, at the age of 25 he won his Chef de Cuisine diploma, the youngest person ever to do so. MR. AND MRS. THE BRIDE is currently employed with Universal Credit Union in Provo, np years, 1978 and 1979, he led the Dorchester to success in the Culinary Olympics in Germany: the Grand Prix Gold Medal, a silver trophy for the Prix dHonneur and individual gold medals. They also won five gold medals at the Salon Culinare in Basle. Mosimann put his best recipes, created not only at the Dorchester but at famous hotels in Switzerland, Italy and Canada, in a book, Cuisine a la Carte. It was published by North-woo- d Publications, 20 Soho Square, London W.l. It will be available in better bookstores in the United States, he said. There are some of his most famous creations: SUPREME DE CANARD AU POIVRE VERT (Breast of Duck with Green Peppercorn Sauce) 4 breasts of duck, about 5 ozs. each 1 oz. sugar 33 ozs. white wine 2 apples 1 oz. green peppercorns 2 ozs. duck juice butter poach for about 35 minutes in a moderin a ate oven at 250 degrees. Allow to cool and cut into 10 slices. Arrange on Tomato Vinaigrette and garnish with tomato quarters and green beans 16 ozs. broccoli 12 ozs. small carrots bain-mar- ozs. courgettes (a type of squash) 4 ozs. small zucchini Salt, freshly ground pepper 1 tbsp. butter 8 cup watercress 5 It is important that the vegetables be allowed to cool in their own water after blanching. The water must be cooled on ice. Only in this way is the individual taste of each vegetable brought out. All the vegetables must be crisp al dente. Break off the stems of the artichokes and cut away s of the leafy head with a knife. Remove the remaining leaves from the artichoke bottoms and take out the inside choke of the artichokes. Blanch the bottoms immediately in salted water, some lemon juice and a little olive oil. Then cook the bottoms in three-fourth- more salted water until Allow to cool in stock over ice as outlined r. above. String green beans and blanch quickly. Divide the broccoli into small flowerets, clean and blanch quickly. Peel the carrots, blanch quickly, and cut into narrow lengthwise strips. Blanch the courgettes and cut into quarters lengthwise. Clean and blanch the zucchini and cut into narrow lengthwise strips. Then make a Chicken Mousseline: CHICKEN MOUSSELINE 4 ozs. white chicken meat, uncooked 7 ozs. cream watercress with stalks removed 3 ozs. Grill duck breasts until they are pink. Color the sugar lightly in a pan, add white wine, little by little, slowly and carefully. (Adding cold liquid to hot sugar all at once can create an explosive condition.) Peel apples, cut in wedges, cook in the sugar and wine until soft. Remove the nerves from the meat and mince finely, then push through a sieve. Put in a bowl on ice. Mix in the cream vigorously, a little at a time, until a light airy farce is formed. Liquidize the watercress with a litof d tle water. Mix the chicken mousseline with the watercress puree. Season both farces with salt and Place the grilled duck pepper. 1 oz. breasts hot plates, arrange apples on top of the duck, pour juice around them. Brown the butter, add green peppercorns and pour over all. 2 4 on TERRINE COVENT GARDEN (To serve 10) artichokes ozs. young tender From Houston. Fill the terrine dish with a layer of each of the vegetables, spreading some chicken mousseline farce between each layer. Press each layer of vegetables, laid neatly in rows, into the mousseline. Cover the terrine dish and TOMATO VINAIGRETTE 4 tomatoes, blanched and peeled 3 ozs. wine vinegar Vi cup olive oil 7 ozs. tomato puree 9 ozs. chicken stock Salt and freshly ground pepper Mix the chicken stock with the tomato puree. Liquidize the fresh tomatoes and add to the above mixture with the vinegar. Add the olive oil very gradually, whisking it in with a wire whisk. Season with salt and pepper and, if necessary, a little sugar and lemon juice. Strain. Divide the sauce between places and place a slice of terrine in the sauce. At a private dinner party at the Dorchester, Chef Mosimann served a Hugel wine, Cuvee les Amours, Pinot Blanc de Blancs with the terrine. With the duck, he presented Chateau Meyney 71. This shellfish salad was superb, dressed with a buttery spinach puree and wilted basil.
