Early grain millers crushed the whole grains between two large stones (I bet they had blisters). Fine milling was flour, and coarse milling was cereal. All of the nutrients were preserved in these grains as no heat ley, oats, rye, buckwheat, was required for this process and the people thrived. In the mid 1800s a silk bolting cloth was invented that separated the bran from the flour, depleting the flour. Then, in 1874 a steel roller mill was invented taking the flour through a high heat process, one hundred times faster than the old method. This process further depleted the flour by destroying the grain structure. And because the hot wheat germ gummed up the roller it was decided the wheat germ also had to go. When the wheat germ was removed the delighted millers noticed the flour didnt go rancid. At this point in history (after the steel mill was invented) the incidence of heart disease became a food. threat. Eat whole grains. People who start eating grains might experience some slight bloating for about two weeks, then the bloating dis- appears. The body has to adjust to new additions to the diet, especially when the foods play such an important role in the digestive tract. Mounting evidence now suggest that whole grains actually alleviate colon cancer. The grains literally pull the water from the cells into your intestimes to keep the bolus (chewed food) moving steadily along to be eliminated. Because the food moves through the tract, the chemicals in the food do not have a chance to be absorbed as readily as they normally would. Conversely, when white flour or foods with the deprived flour arc consumed, the bran is missing so the water from the cells does not have the ability to be absorbed into the digestive tract. Therefore the food becomes compacted and will not move normally and be eliminated easily. All the chemicals in the food are absorbed into the body and colon cancer can result. Also, those of you who are constipated, whole grains literally keep your digestive tract cleaned out. Whole grains have such nutritional merit they are the most important food in my dieting plan. Whole grains have three main parts, lets analyze brieflywheat. Because wheat is indeed for man. Wheat has the germ, the endosperm and the bran. The germ, as mentioned is the life of the wheat, the endosperm is the only part of the wheat that is used in white flour, the germ and bran has been removed. Because bran has no nutritional benefits and has almost no calories man determined it was no necessary, so why bother with the little flakes. What man didnt know at the time is the little flakes of bran act as a sponge in the digestive tract. Bran literally pulls water from the cells into the small intestine to keep the bolus (chewed food) liquid, so it can move through into the large intestine and be eliminated. Because the liquidifed food moves through the absorption process at a normal rate all of the calories, fats and chemicals do not have time to be absorbed, and they are eliminated. White flour does not have the bran so white floured foods stays more compacted in the digestive tract because without the bran, water isnt pulled into the tract to keep the bolus moving, so all the calories, fats and chemicals are absorbed by the body. White refined flour and its products as you can see disrupt and overwork the digestive tract. The big push in the last couple of years is to push Bran. People put it in everything. They sprinkle bran over their eggs, spaghetti and you name it. I worked for an international dieting company, that doesnt have in my estimation, enough whole grains in their program, so they push bran. In working with their dieters, putting bran on foods to alleviate constipation does not work effectively. The more bran they ate, the more constipated they became. Bran should be eaten in the natural kernal of whole grains. All of the grain parts have specific functions and they work together as a team to create healthful results.
