Clay-baugh- Her Christmas Ruth treats are Danish style y Sagit-tarian- by Sarah Yates takes on a Danish flavor at Katie Fishbums home. She was raised by a Danish mother and Greek father, so the family divided the most special holidays between the two traditions a Danish Christmas and a Greek Easter. So her Christmas table is set with delectable holiday treats that would make a wandering Dane feel right at home. Theres the brined meat roll Rolle Poise served on Danish rye squares, pickled red cabbage, vanilje kranse cookies, fried kilner twists, peppemut cookies. The family always breakfasts on toasted sliced of Jule Kage (Christmas cake). For the children theres a Danish rice pudding with a hidden almond in one bowl so its finder can claim a prize. Katie says she put an almond in each bowl to avoid disappointment, however. Katie starts her preparations early, as did her mother Esther Hodges. Her husband Russell, a local dentist, loves the traditions and her grown up children Nancy Holt and Tom look forward to the special smells that come from the kitchen at holiday time. Grandsons Brett are her best Georgie, age 11, and taste testers. Christmas brings special memories as Katie remembers Christmas Eve gatherings at Licensteins where the children eagerly awaited the arrival of grandparents Hyrum and Marie Johnson dressed as Mr. and Mrs. Santa Claus in their bobsleigh with bells. And her grandfather told of the Jule Nisse, little people who lived in attics and helped the Danish people little girl wished at Christmastime, as the wide-eye- d she could go to Denmark and bring home a with the full of the little people. Shes new Danish blue china plate shes received to add to her collection this year, for it pictures one of those special little people. This years Christmas celebration will be especially interesting at the Fishburn household, for theyll be entertaining some of her fathers relatives from Christmas.
