Show Garland Gazette Good Cooks Cold and wintery days are definitely cookie jar time. Children especially need sustenance between meals and Mrs. D. E. (Joan McArthur) Hansens recipe for peanut blossoms (cookies) are sure to please. Joan was born in Mt. Pleasant and graduated from North Sanpete High school. She was employed at a sewing plant in Mt. Pleasant prior to her marriage. Her husband is a boiler fireman at Thiokol corporation. He has an irrigated farm and raises sheep. They have four sons and one daughter Ralph, 18, Roger, 15, Renee, 14, Kenneth, 9, and Roy, 6. They lived in Plymouth a short time before establishing a permanent home in Fielding. The day seems to have just a bit more sparkle when Joan is around. Shes a happy, bubbly, little dark-eyegal who is always willing to serve whenever needed. She has served as secretary, and is currently president of the Bear River chapter of Utah Young Homemakers. She has also served as state reporter. She is presently a den mother for cub scouts. She has been both a teacher and counselor in Primary and speech director in MIA. She was also secretary of the Fielding PTA. Joan enjoys sewing for herself and her daughter. She was employed at the Brigham Apparel Corporation for some time. I have always loved to cook" she said. "I remember the first time I made gravy while still in my teens- -I dont know why, but I kept adding flour, and still more flour! The result was a huge glob-whwas definitely not eatable. Joans cooking is now considered excellant by her dinner guests. "We enjoy camping and fishing as a family Joan noted. For dumplings: boil two med. size peeled potatoes. Drain water into soup. Mash potatoes and cool. Add 2 eggs and beat well. Add 1 c. flour, a little at a time and continue beating. Add y2 tsp. salt. Put rounded T. of dumplings into soup and simmer for approximately 10 min. Dumplings will be fluffy and delicious. The recipe for Dilly Bread is especially good with chili or spaghetti, Joan added its moist and has a very good flavor. PEANUT BLOSSOMS (Makes 4 dozen cookies) DILLY BREAD c. granulated sugar, 1 c. packed br. sugar, c. butter or margarine, 1 c. creamy peanut butter, 2 eggs, c. milk, 2 tsp. vanilla, 3i2 c. sifted flour, 2 tsp. baking soda, 1 tsp. salt, 1 pkg. choc, stars or milk choc, candies. Cream sugars, butter and peanut butter. Beat in eggs, milk and vanilla. Sift together flour, soda and salt. Stir into egg mixture. Shape into balls; roll in additional sugar. Place on ungreased cookie sheet and bake at 375 degrees for 10 to 12 min. Immediately press a chocolate candy in the center of each cookie. Yields 4 dozen. c. warm water, 1 pkg. dry yeast, c. cottage cheese, heated to lukewarm. 1 T. sugar, 1 T. minced onion, 2 T. butter or margarine, 2 tsp. dill seed, 1 tsp. salt, y2 tsp. baking soda, 1 egg, 2 to 2j4 c. flour. Soften yeast in water. Combine in mixing bowl: Cottage cheese, sugar, butter, onion, dill seed, salt, soda, egg and yeast. Add flour to form a stiff dough, beating well after each addition. Cover and let rise in warm place until double in size. (1 hour) Stir down dough. Turn into well buttered 8 round casserole dish and let rise approximately 40 min. Bake at 350 degrees for 40 to 45 min. or until golden brown. Brush hot loaf with butter and sprinkle with y4 1 1 "The following recipe is one which my mother gave me. The state convention of the organization will be held on in Salt Lake City, and it Feb. will initiate official campaigning for the state positions with local chapters supporting their candidates for the honor. Voting delegates representing each chapter in the state will then select the state officers for the coming year. Mrs. Ferry served as vice president of the Willard Bay chapter of Young Homemakers last year. She is presently serving as president of the organization, a requirement necessary for nomination to the state position. As the mother of three sons, Steven, six; Ryan, four; and Paul, two; Mrs. Ferry has served as mother education leader in the Mantua LDS ward and also as the Relief Society organist. She is also active in PTA work and has served as a room of mother and as PTA View Mountain the Halloween carnival.
