Aubuj li's use 'em or lose 'em with summer tomatoes By JOE STUMPE You've eaten them sprinkled with salt, sliced over salads find layered on enough BLTs to put Hell man's out of business. You've foisted them on friends and family, nagged neighbors and to take "just a few" home until the sight of you with a bulging grocery bag can mysteriously clear a room. OK, maybe it's not as bad as all that, but you are wondering how you'll dispose of the tower of tomatoes mounting daily in your garden. A t ypical tomato plant can yield 20 to 50 pounds of tomatoes a summer, with some varieties bearing twice that amount. Multiply that by a few plants and that's a lot of tomatoes, even for someone in love with the "love apple," as the Europeans once called the food. Fortunately, there's no shortage of tomato recipes out there. As luscious as it is on its own, the tomato may lag only behind the onion in versatility when paired with other foods. It adds a splash of taste, primary color and , nutrients to any dish: From 'South and Central America, where it originated, come salsas. fiery pepper-ladeFrom the Mediterranean, emerge sunny sauces, salads, r soups, tarts and gratins, usually featuring garlic and olive oil. Even cooking from the Indian subcontinent utilizes tomatoes in condiments with yogurt and exotic spices. All of these approaches and more show up in the United States, where the tomato is the favorite garden vegetable grown. n Skinning a tomato Yet, some people who would not hesitate to open a can of tomatoes to make their own spaghetti sauce are reluctant to cook with fresh t tomatoes. One stumbling ; block seems to be that sauces made ; and other concoctions with fresh tomatoes tend to j be watery, with seeds and j pieces of skin. For many preparations, this j is even desired. However, fine, j there is a simple technique "clean-- j j for achieving a thicker, er" product. First, bring a large pot of water to boil. Other options for increasing your total pleasure from fresh tomatoes include canning and freezing. Most guidebooks say whole tomatoes and preparations with large pieces of tomato in them suffer in texture when frozen; canning is recommended instead. As a writer in The New SSork Times recently put it: s jf?The craze for picture and patios during the l950s and '60s that became the gardening renaissance of the '80s that became the boom in casual outdoor living in the early 1990s has found its endgame: outdoor interior decoration." A slew of new ,ways to spend money in the garden can leave a gardener's head a whirligig, jjpinning like the budget when jgjspecially the yard can only (and ""Should only) hold so many win-j3ow- Jjid ornaments.' "I'm such an eclectic person it confuses me, because I like a lot of different things," says Rosa McHenry, who is not only a gardener also but a purveyor of the things that confuse her at McHenry's Home & Garden in Wichita, Kan. But she insists that all the options add to a gardener's fun and, like a gazing ball reflecting flowers, can become part of the fabric of nature. These beautiful things are helping people express their personalities," McHenry says. I talked to McHenry and other experts and gardeners to Sname.
