WINTERS Herald Food Editor the truck before the rain begins. Don is the first one to miss the vehicle after the downpour starts. Deer hunting is a big annual event for my husband Don's family. That's the time of year when even the most sophisticated male in the group turns from mature business man to hairy cretin and regresses to a vocabulary limited to "Me man. You woman. Me kill Bambi." Yet even in that unrecognizable group of savages, one man stands out: my brother-in-laRandy. If there is a hero in the war against deer then Randy is the Audie Murphy of the hills. When only one person in the party gets a deer, it's Randy. He Don's usual excuse for being is that he had been trying to find some old antlers to sew on top of the head of the critter he shot. Randy even gets better bargains. He finds bullets and other hunting supplies at their lowest prices of the year. Don finds them the day after the sales are over just when prices are the highest. Several years ago, Randy and Don went fishing the day before a deer hunt. Randy caught his limit and Don caught pneumonia. Don may not be the great white hunter, but I love him anyway (maybe more because I don't have to clean, cut and wrap deer them), and plan to fix him this delicious main dish starring venison. I wonder where I could find some deer meat. late inevitably emerges victorious from the hills. Don, on the other hand, usually looks more like a prisoner of war as he drags his empty handed body from the mountain. If a four point buck sneaks behind someone to announce his presence and invite being shot, Randy is the person he sneaks behind. Don is the one who carefully spots the animal, sits down for careful aim and finds himself in pain because he sat on a prickly pear cactus. Randy even has more luck in tracking the animals. He's the one who finds fresh deer tracks. Don is the one who finds stale deer droppings. When Randy misses his target, he hits the deer in the head instead of the heart. When Don misses his target, his bullet ricochets and he hits a doe instead (note to all fish and game officials: please disregard the above statement). Brown veal and onion in butter. Stir in undrained rice and remaining ingredients. Spoon into a one and a half quart casserole. Cover and bake for one and a half hours or until all liquid is soaked up. rice is a wonderful side dish or stuffing for that holiday bird.
