LAMB My husband had a checkup and his docnr tcld him that he should go on a low-fadiet. That's fine but I'm the cook and I havt to figure out how to feed him. The problem is that he likes meat. I mean beef and pork. I know he won't be happy unless he gets some meat. I have read in your column before that it makes a difference what meat you use. I know that most cold cuts like hot dogs and bologna contain lots of fat. But he doesn't really care for those anyway. What I need to know is if he can have a steak now and then and what about roast beef and ham. Could you give me some information on what meats he can eat, if any, and is there anything special I can do in preparing them to cut down on the fat? I've heard that a lot of the fat drips out when you cook meat. Also what about hamburgers? He likes those. DEAR READER Good thinking No, you do not have to eliminate red meats to be on a low-fadiet. Remember you need to look at the total diet, including salad dressings, breakfast rolls and desserts which are often high in fat. Since meat is about 70 percent water, and you can't really make comparisons based on grams of fat content, I'll give you the information in percent of calories. The best lean beef cut is round steak. Lean raw round steak with all the visible fat cut away is about 30 percent fat, and that is usually low enough. Of course it is only 5 percent fat by weight but that is important because of water weight. Buy "good" grade not "choice" beef. Remove the fat before cooking. The separable lean of a steak is about 36 percent fat in calories, flank steak 33 percent, arm roast 28 percent and rump roast 35 percent. Make hamburger by grinding the separable lean only of any of these. Then broil it. Fat that drips out during cooking is mostly fat that could have been cut away before cooking. The separable lean of ham is the leanest cut of pork. Some are less than 45 percent fat in terms of total calories. Estimate that all red meats contain 70 mg of cholesterol for each 100 gms, ounces. The doctor said as long as I have no pain and the spleen functions well they will not do anything. If I eat too much I get a heavy feeling in the stomach. That is my only complaint. Please tell me if I can eat all foods and if there is any medication for my spleen. I'm 83 years old and my blood pressure is 150 over 80. DEAR READER Many people have some enlargement of the spleen. It is so common in so many illnesses that if you said the spleen is enlarged in 15 percent of cases you would be about right. The fact that you have had such a complete evaluation and all tests were normal suggests it has little or no significance in your case. That means you should live as if you didn't know you had a spleen. Just forget about it. The spleen is a specialized large lymph gland, important in the balance of blood cells.
